Hot Cocktails
Raspberry Mint Julep Blazer: Take two brandy balloons and two rocks glasses. Fill the rocks glasses with boiling water and rest the two brandy balloons on them to warm them. Into one of the balloons, add 50ml (two shots) of bourbon and a brown sugar cube. Turn the glass to warm the bourbon then ignite with a flame. While alight, add 10ml (two teaspoons) of framboise, three or four raspberries and four mint leaves. Keep turning. Finally, using a tea towel, cover the glass to extinguish the flame, then empty the first glass into the second one, ensuring the raspberries go into the new glass but the mint leaves stay behind.

The Hot Toddy: Into a heatproof glass, add a teaspoon of granulated sugar, three cloves, one teaspoon of runny honey, two shots of whiskey and top it all up with boiling water. Garnish with a cinnamon stick, slices of lemon and serve.

Bloody Mary Soup: Take a mug and fill with tomato juice. Add two dashes of Tabasco, a grind of black pepper and the juice of one lemon. Put the mug in the microwave for 30 seconds. To the hot juice, add 50ml (two shots) of chilli and basil infused premium vodka. Serve with some slices of toasted baguette. To make the vodka, add one whole, de-seeded red chilli and four to six basil leaves to a bottle of vodka. Lie bottle in a cool place and turn twice a day. After one week, strain through a coffee filter, and re-pour into the bottle.

Hot Buttered Rum: For the butter you will need: 1oz butter, softened 4oz brown sugar 1/8 tsp ground cloves 1/8 tsp ground nutmeg 1/8 tsp ground cinnamon 1 pinch salt Beat all the ingredients together to a smooth consistency. Take a heaped teaspoon and put into a heatproof glass. Store the remainder of the butter in a fridge for future use. Pour in 50ml (two shots) of decent rum – something like Bermuda’s Goslings Black Seal – and stir together with 150ml of boiling water. Serve with a slice of lemon.

The Coffee Nudge: Put a teaspoon of granulated sugar in a heatproof martini glass. Add 25ml of cognac, a teaspoon of coffee liqueur, and a teaspoon of cr~me de cacao. Fill the glass with hot espresso coffee and serve.

The Spiced Vanilla Tom & Jerry: You will need: 1 egg 2 tsp vanilla sugar 1 pinch ground cinnamon 1 pinch ground cloves 12.5ml spiced rum 12.5ml cognac 50ml boiling water Break the egg and separate the yolk from the white. Beat the white in a bowl and whisk until stiff. Place the egg yolk, sugar and spices in a deep dish and mix together. Pour everything from the bowl into a heatproof glass and add the booze. Add the boiling water and stir. Add some of the egg white on top of the drink and garnish with nutmeg.
